LEWISTON - It's a new business that offers an alternative to the usual burger, but the owner knows opening any new business in the current economy is risky.

"It's boom or bust," said Pita Pit owner Bret Gibson.

Gibson said opening the new business was a bit stressful, considering other businesses are closing due to the downturn.

"It was, but at the same time my previous business was suffering because of it so I figured, well, everyone has to eat, this might be the way to go,' said Gibson.

That previous business was a ceramic tile company, which helped lead Gibson into the deliciousness of fresh pitas.

"A couple years ago we were doing a fraternity in Moscow and we were driving around trying to find a place to eat," said Gibson. "We stumbled upon the Pita Pit, which we didn’t know what it was, we tried it and when we left we were like ‘wow if we ever try to do something different that's what we are going to do’, because that was really good. And here we are."

The Lewiston restaurant employs 22 people. Gibson said the first couple of weeks were hectic but now everything is running smooth.

"Just like any business starting out, we have out bumps and things we have to work through and it takes a little bit of time, but we will get there," said Gibson. "We do like to have fun and that's kind of what we like to promote is fun and healthy eating."
